This was my first-time making clams. I had made mussels before, but I had no idea what I was doing. I bought this cookbook on sale on my kindle. My kindle has been so helpful when searching out recipes and making them. I have a huge cookbook collection and an even bigger collection on my kindle. If I had physical copies of all my cookbooks, I wouldn't have space for anything else in my house.


I really enjoy this cookbook. Most of the recipes are not extremely labor intensive and are doable but feel very elegant! The recipe for clams was very helpful and walks you through how to create the recipes.


Notes:


  1. I did not have littleneck clams. So I used larger clams that were at the meat counter.

  2. I did not add swiss chard

  3. Not all my clams opened! It was hard to let them go but I understand they are dead and cannot be eaten.

  4. It turned out very well. It was garliky and salty due to the pancetta. I think adding a generous shake of ground pepper or fresh cracked peper is crucial for the final dish.

  5. If I were to make it again, I would add a small amount of spinach and buy more clams! I ended up only having 3 clams to eat when it was done. I would also try adding red pepper flakes. I bought these from Pepper Palace and they add so much flavor!

6. This dish has been on my mind since I made it last summer and I looked forward to making it again! It seems like a dish most people would like, so it might be good for a dinner party. Or it could be great for a date night at home with a bottle of Sauvignon Blanc.
